Vegan Recipes


Kale Chips:

-1 bunch kale

-2 tablespoons olive oil

-2 teaspoons seasoned salt

1). Preheat oven to 350 degrees F (175 degrees C).

2). Remove leaves from the thick stems and tear into bite size pieces. Wash and thoroughly dry kale with a salad spinner. Drizzle kale with olive oil and sprinkle with seasoning salt.

3). Bake until the edges brown but are not burnt, 15 minutes.

Coconut, Date, Pecan Oatmeal Cookies:

-2 1/2 cups Quaker oats

-1/2 cup sweetened finely-shredded coconut

-1 teaspoons baking powder

-1 teaspoon ground cinnamon

-1 teaspoon nutmeg

-1/4 teaspoon sea salt

-1/2 cup coconut oil, solid

-2 tablespoons maple syrup

-1 large ripe banana

-1 cup Dates, packed (soaked for 10 minutes in warm water and then drained)

-2 teaspoon vanilla extract

-8 tablespoons chia seeds

1). Preheat oven to 375 degrees.

2). Pour oats into a bowl with shredded coconut, baking powder, cinnamon, nutmeg, and salt. Set aside.

3). Mash banana and dates, add in chia seeds once smooth.

4). Beat together solid coconut oil, maple syrup, vanilla extract with mashed banana and dates.

5). Add dry ingredients and mix together until even consistency

6). Scoop out 2 tablespoons of cookie dough, shape into a ball, then flatten lightly with your hand. Repeat with remaining dough

7). Bake for 10-12 minutes, let sit on the cookie sheet for a couple minutes, then transfer to a cooling rack to cool completely.
